It’s that of the year when you want to snuggle up at the TV with a nice healthy hearty meal and watch some good old Come Dine With More.

 

I decided to create a leek-based recipe. Here are my two leek loving creations

Leek Honey Soup

Serves 4

 

You will need….

  • X6 Leeks

  • Honey

  • Mustard

  • Cream

  • Carrots

  • Milk

  • Thyme

  • Basil

  1. Boil leek in a pot of water for 20 minutes until leeks soften.

  2. Drain the water and get a mixer and mush the leeks up.

  3. Place the mashed leeks in a pan.

  4. Ad 2 table soups of Honey.

  5. Ad 2 teaspoons of Mustard.

  6. 3 Table Spoons of Cream.

  7. Mix until fluffy/thick

  8. Ad milk – (As much as you want if you want it really liquidly or a little to have a thick base)

  9. Keep mixing until bubbly

  10. Add a sprinkle of thyme & Basil.

 

Roast Leek Chucks

Serves 3

 

  • X6 Leeks

  • Salt

  • Pepper

  • Basil

  • Chicken gravy granules

  • 2 onions

  • 2 chicken breasts

  • Garlic Clove

  • Oil

  • 1 Potato

  • 300g mushrooms

  • 2 large carrots

  • Cheddar Cheese

 

  1. Turn the Oven on to 170

  2. Wash and cut the leeks into chucks.

  3. Sprinkle some salt/pepper/basil in. Take it off the heat .

  4. Gather a sauce pan add some oil, diced chicken (2 chicken breasts chopped)

  5. Add a garlic clove chopped up & Chopped potato.

  6. Mix until brown

  7. Get a baking tray add oil, cut onion, cut carrots, cut mushrooms, and throw the leeks in and give it a mix about.

  8. Add the chicken in (Leave the juice from the chicken on the side and place in a small ball)

  9. Place tin foil on top and cook for 20 minutes

  10. While cooking gather some gravy granules, and water and add the extra juice from the chicken.

  11. Once heated pour over the leeks & chicken and add small blocks of cheddar cheese in-between the chucks.

  12. Cook for a further 5 minutes until a slight crisp.

  13. There you go! Bob appetite!
