The 17th of March is St. Patrick’s Day, and it’s a “day to wear green” and other Irish traditions. Even if the Patron, St. Patrick was not born in Ireland, all Green (symbolizing spring and crop prosperity) can still be used or used for this day of fun and Iris.

St. Patrick’s Day Deviled Eggs

Ingredients

  • 10 eggs
  • 1/2 cup mayonnaise
  • mustard, chives, bacon bits, pepper, etc. (optional)
  • green food colouring
  • white vinegar
  • ground paprika

Instructions

  1. Place your eggs in a large pot and cover them with water. Bring the water to a boil, then reduce the heat to low and simmer for 15 minutes.
  2. After the time is up, rinse the eggs with cold water. Peel and split the eggs.
  3. . Reserve,
  4. Mix food colouring. Add 3 drops of green food colouring to several cups of water. To assist egg whites in absorbing colour, add 1 tsp vinegar to each glass. Place egg whites in the glasses. As the whites turn pastel green, remove them and dry them on a paper towel.
  5. Fork-mash your egg yolks. Add 1/2 cup mayonnaise and mustard, bacon, or chives to taste. Salt is unnecessary because yolks are salty.
  6. Fill egg whites with filling using a tiny spoon. Paprika the filling.

Ingredients

  • 1 bottle chilled Champagne, Prosecco, or your favorite sparkling wine
  • 2–4 cups pulp-free orange juice
  • 1 cup Blue Curacao

Instructions

  1. Fill the champagne flute 1/3 of the way with orange juice.  Add a splash of Blue Curacao to the champagne flute and mix with a straw or spoon.
  2. Slowly fill the rest of the glass with your favourite sparkling wine.
  3. Enjoy!

Lucky Charms Rice Krispie Treats

Ingredients

  • 5 C Lucky Charms Cereal plus extra marshmallows to add to top
  • 4 C Rice Krispies Cereal
  • 1- 10.50 oz bag of mini marshmallows
  • 5 teaspoons salted butter
  • Green gel food colouring

Instructions

  1. Butter a 9×13″ baking dish.
  2. Melt marshmallows twice in a microwave-safe bowl.
  3. Melt butter in 20-second increments in a microwave-safe bowl.
  4. Microwave marshmallows again with butter for 20 seconds.
  5. Mix Rice Krispies and food colouring.
  6. Mix Lucky Charms.
  7. Spread mixture in a baking dish with a buttered rubber spatula.
  8. Refrigerate.
  9. Cut into 12 squares or 8 for larger snacks.

Hidden Pot of Gold Brownie Cups

Ingredients

For the Brownie Cups:
  • ½ cup butter
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder
For the Frosting:
  • 1 /2 cup 1 stick unsalted butter, softened
  • 3-4 cups powdered sugar
  • 1 tablespoon heavy cream or milk
  • 1 teaspoon vanilla or almond extract
  • green food colouring gel
  • gold Sprinkles – gold stars, or other edible gold decorations!

Instructions

  1. 375°F oven.
  2. Melt 1/2 cup butter for brownie cups. Eggs, sugar, and vanilla. Wooden spoon stir.
  3. Mix flour, cocoa powder, salt, and baking powder in another basin. . Avoid overmixing.
  4. Scoop 2 teaspoons into a greased mini muffin pan (with each cavity about halfway full).
  5. Bake 15-18 minutes until edges release and a toothpick inserted in center comes out clean.
  6. After cooling, press brownie center with wooden spoon for gold. Sprinkle gold.
  7. Beat butter and 2 cups powdered sugar in a paddle-equipped bowl. Add sugar by cup. Cream with food coloring. Beat medium for 2-3 minutes until frothy.
  8. To disguise the gold surprise, swirl a dab of frosting on each brownie cup with a piping bag and fluted tip! Sprinkles or shamrocks.

St. Patrick’s Day Popcorn

Ingredients

  • 4 quarts popped popcorn
  • 1 cup sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup water
  • 1/2 cup light corn syrup
  • 1 teaspoon white vinegar
  • 1/4 teaspoon salt
  • 1/2 cup butter
  • 8 to 10 drops green food coloring

Instructions

  1. Keep popcorn heated in a big roasting pan at 250°. In a large heavy pot, mix sugars, water, corn syrup, vinegar, and salt. Mix and boil over medium heat. Stir occasionally until a candy thermometer hits 260°. (hard-ball stage).
  2. Remove from the heat; stir in butter until melted. Stir in food colouring. Drizzle over warm popcorn and toss to coat. Cool. Break into pieces. Store in an airtight container.

St Patrick’s Day “Pot O’ Gold” Queso

  • 1 Jar of queso
  • 4 Spinach Leaves
  • Black Bowl
  • Free “Pot O’ Gold Queso” Printable

Instructions

  1. Pour your jar of queso into a black bowl.
  2. Arrange four spinach leaves on top of the cheese dip to resemble a four-leaf clover.
  3. Print out your free “Pot O’ Gold Queso” sign, fold in half, and place in front of the dip. Serve with chips and enjoy!

Parmesan Broccoli Pasta

Ingredients

  • 16 oz dried pasta
  • 24 drops of food coloring
  • butter
  • 1 cup shredded Parmesan cheese
  • 2 cups chopped broccoli

Instructions

  1. Fill a large pot with water.
  2. Add the food coloring to the water and bring it to a boil.
  3. Add your pasta and cook it as the packaging says.
  4. While the pasta is cook your broccoli. You can use fresh or a steamer bag of broccoli.
  5. Drain off the pasta and add butter to taste.
  6. Then add the broccoli and parmesan cheese.

Irish Potato Candy

Ingredients  

  • 4 oz cream cheese softened
  • ¼ cup unsalted butter softened
  • 4 cups powdered sugar
  • 2 ½ cups shredded coconut
  • 1 tsp pure vanilla extract
  • 1 tbsp ground cinnamon
  • ½ cup light brown sugar

Instructions

  1. Blend butter and cream cheese with a hand mixer.
  2. Blend vanilla.
  3. Add powdered sugar slowly.
  4. Add shredded coconut using a rubber spatula.
  5. Foil and refrigerate for one hour.
  6. Roll a tablespoonful of the ingredients into a ball.
  7. Repeat until all the mixture is in a ball on the cookie sheet.
  8. Mix brown sugar and cinnamon in a medium basin.
  9. Brown sugar-coat each dough ball.
  10. Repeat until all balls are coated.

Guinness Cheddar Dip

Ingredients

  • 8 oz cream cheese softened
  • 1/3 cup Guinness beer
  • 1 tbsp Worcestershire sauce
  • 2 tsp brown (pub style) mustard
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 6 oz Irish cheddar cheese shredded
  • 1/4 cup green onions finely chopped
  • 12 small soft pretzels baked from frozen

Instructions

  1. With a hand or stand mixer, whip together the softened cream cheese with the Guinness, Worcestershire sauce, mustard, garlic powder and salt until smooth.
  2. Add the shredded Irish cheddar cheese and blend on low until combined.
  3. Fold in the chopped green onions with a spatula.
  4. Place the dip in a bowl and cover. Refrigerate for two hours before serving. 
  5. Serve the Guinness cheddar dip with baked soft pretzels.
